Cantaloupe

CANTALOUPE, PROSCIUTTO AND BASIL SALAD

Ingredients:

–       1 very small cantaloupe, peeled, seeded and cut into pieces

–       1 tablespoon extra virgin olive oil

–       1 teaspoon red wine vinegar, or to taste

–       50g prosciutto, thinly sliced, torn into pieces

–       A few basil leaves, thinly sliced

–       Kosher salt

Mix first 3 ingredients in a bowl. Add kosher salt to taste. Let sit for at least 10 minutes. Strain out juices. Add prosciutto and basil. Mix with additional extra virgin olive oil to taste. Serve.
